Sprouted mung beans

Sprouted mung beans are super nutritious, slightly sweet and easy to sprout. 

They can be added to salads, soups or eaten as a separate snack. I spout them in a sprouting jar because that makes it so easy to rinse them after the initial soaking for 8 hours in lukewarm water.

As soon as you see a little sprout they’re at their most nutritious and you can just keep them in the fridge in order to slow down the sprouting.
